The season of mangoes and a competition to show my skills....and less time in my hands. What should I make ? Of course the yummiest all time favourite Bengalee sweet .... AAM SHONDESH
Ingredients needed (for eight peices):
milk : 1 litre
white vinegar : 4 tablespoon
sugar : 150 gms
ripe mangoes :3( preferably Alphonso)
Procedure :
Heat the milk in a pan.Once it starts boiling switch off the heat and add the white vinegar.Let the milk curdle.
Hang the curdled milk for 30 minutes in a clean muslin cloth for draining the excess water.What we get later is called chhena in Bengal.
In the mean time take out the pulp from two mangoes and smoothen it with a blender.
Peel the third mango and cut into small peices.
Also powder the sugar. Powdered sugar gives your shondesh a smooth texture.
Now take out the chhena and churn it in a mixer jar to get a smooth blend.
Take a pan (preferably non stick) and brush it with a little oil. Add the chhena and the sugar powder and stir till the sugar blends with the chhena.
Now add the mango pulp and keep on stirring till you get a thick consistency.Take care that the mixture should not form lumps or stick to the pan.
Once it is done, let it cool. Your shondesh mix is ready. Oil your hands for the next step. Once it reaches a temperature your hands can bear,take some shondesh mix in your hands, stuff it with a mango cube and shape it as you wish.
You can even have the shondesh without the mango stuffing.The most delicious shondesh is ready.
